Nach seiner Schulausbildung 1976 am Kabataş-Jungengymnasium und seinem Grundstudium 1982 an der medizinischen Fakultät der Universität Istanbul begann Sabuncu 1995 seine Arbeit als Kinderarzt am Zeynep Kamil-Krankenhaus für Gynäkologie und Kinderheilkunde und nahm in den Jahren 2004, 2005, 2007 und 2010 an verschiedenen medizinischen Kongressen in Litauen, Spanien, Portugal und im Iran teil.

Im Jahr 2012, nachdem er seinen Dienst in der Kinderklinik des Zeynep Kamil-Krankenhauses beendet hatte, erhielt Sabuncu 2019 ein Zertifikat für Neugeborenenrettung und arbeitet seit 2021 in der Naturklinik.
